- 1 cup jasmine or brown rice
- 2 cups water or chicken broth
- 1 lb (450g) boneless chicken breast, cubed
- 1 cup fresh pineapple chunks
- 1 bell pepper, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp soy sauce or tamari
- 1 tbsp olive oil or sesame oil
- 1 tsp ginger, grated
- Salt and pepper, to taste
- Optional: green onions, cilantro, or sesame seeds for garnish
Instructions
- Cook rice according to package instructions using water or broth.
- Heat oil in a pan over medium heat. Add garlic, onion, and ginger; sauté for 1–2 minutes.
- Add chicken, season with salt and pepper, and cook until golden and fully cooked, about 7–10 minutes.
- Stir in bell peppers and pineapple, cooking for another 2–3 minutes until slightly caramelized.
- Add soy sauce, mix well, and remove from heat.
- Serve chicken mixture over cooked rice and garnish with green onions, cilantro, or sesame seeds if desired.
Notes
- For a vegan version, replace chicken with tofu or tempeh.
- Adjust sweetness by adding more or less pineapple.
- Brown rice increases fiber content and keeps you fuller longer.
