Description

A vibrant and flavorful bowl combining tender chicken, fluffy rice, and sweet pineapple, perfect for a quick, nutritious, and tropical-inspired meal. Customize it spicy, tangy, or mild according to your taste.


Ingredients

  • 1 cup jasmine or brown rice
  • 2 cups water or chicken broth
  • 1 lb (450g) boneless chicken breast, cubed
  • 1 cup fresh pineapple chunks
  • 1 bell pepper, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce or tamari
  • 1 tbsp olive oil or sesame oil
  • 1 tsp ginger, grated
  • Salt and pepper, to taste
  • Optional: green onions, cilantro, or sesame seeds for garnish

Instructions

  1. Cook rice according to package instructions using water or broth.
  2. Heat oil in a pan over medium heat. Add garlic, onion, and ginger; sauté for 1–2 minutes.
  3. Add chicken, season with salt and pepper, and cook until golden and fully cooked, about 7–10 minutes.
  4. Stir in bell peppers and pineapple, cooking for another 2–3 minutes until slightly caramelized.
  5. Add soy sauce, mix well, and remove from heat.
  6. Serve chicken mixture over cooked rice and garnish with green onions, cilantro, or sesame seeds if desired.

Notes

  • For a vegan version, replace chicken with tofu or tempeh.
  • Adjust sweetness by adding more or less pineapple.
  • Brown rice increases fiber content and keeps you fuller longer.
