- 2 tbsp unsalted butter
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ¼ cup heavy cream (or half-and-half)
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp garlic powder (optional)
- ¼ tsp paprika
- ½ cup crushed Ritz crackers or breadcrumbs
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, melt butter and sauté sliced onions for 5–7 minutes until soft and translucent.
- Spread onions evenly in the casserole dish.
- Pour cream over onions, then season with salt, pepper, and paprika.
- Layer cheeses on top, covering onions completely.

Notes
- Vidalia onions are the best choice, but other sweet onions work well.
- Shred cheese from a block for smoother melting.
- Let the casserole rest for 5–10 minutes before serving to help it set.
- For a lighter version, swap heavy cream for milk and use whole wheat breadcrumbs.
- Freeze leftovers in portions for up to 2 months.
