The Swedish apple cake recipe is a simple, rustic Scandinavian dessert made with tender apples, warm spices, and a soft cake base—perfect served warm with cream or vanilla sauce.

- 3–4 medium apples (Granny Smith, Honeycrisp, or Braeburn), peeled, cored, and sliced
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter (softened)
- ¾ cup sugar (white, or half white + half brown)
- 2 large eggs
- ½ cup milk
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- Pinch of salt
- Optional: ½ tsp ground cardamom, sliced almonds, or pearl sugar for topping
Instructions
- Preheat Oven: Set oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- Prepare Apples: Peel, core, and thinly slice the apples. Toss with a little cinnamon and sugar; set aside.
- Make Batter: In a large mixing bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
- Combine Dry Ingredients: In another bowl, whisk flour, baking powder, cinnamon, salt (and cardamom if using). Gradually add to wet mixture, alternating with milk, until smooth.
- Assemble Cake: Pour batter into the prepared pan. Arrange apple slices on top in a circular pattern, pressing lightly into the batter. Sprinkle extra cinnamon sugar or almonds on top if desired.
- Bake: Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool & Serve: Let cake cool for 10 minutes before slicing. Serve warm with vanilla sauce, whipped cream, or ice cream.
Notes
- For extra authenticity, sprinkle pearl sugar on top before baking.
- Store leftovers in an airtight container for up to 2 days at room temperature, or 5 days in the fridge.
