  • 2 cups leftover or freshly cooked turkey, shredded/diced
  • 1/2 cup mayonnaise
  • 2 hard-boiled eggs, chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup sweet pickle cubes
  • 2 green onions, thinly sliced
  • 1/4 cup toasted pecans (optional)
  • 1/4 cup dried cranberries (optional)
  • 1 tsp mustard or apple cider vinegar
  • Salt and black pepper, to taste

Instructions

  1. Shred or dice turkey into bite-sized pieces.
  2. Prepare dressing: combine mayonnaise, mustard/apple cider vinegar, salt, and pepper.
  3. In a large bowl, mix turkey, eggs, celery, pickles, and green onions.
  4. Fold in dressing until evenly coated; avoid overmixing.
  5. Chill 30–60 minutes for flavors to meld.
  6. Serve in sandwiches, wraps, or lettuce cups. Garnish with pecans and cranberries if desired.
