- 4 medium russet or Yukon Gold potatoes, diced
- 1 small onion, chopped
- 1 green bell pepper, chopped (optional)
- 2 cloves garlic, minced
- 1 cup sloppy joe sauce (store-bought or homemade)
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced potatoes, season with salt and pepper, and cook until golden and tender (12–15 minutes). Remove and set aside.
- Cook the ground beef until browned, then drain the excess fat.
- Add onion, bell pepper, and garlic. Cook until softened.
- Stir in sloppy joe sauce and simmer for 3–4 minutes.
- Return potatoes to skillet and mix well.
- Top with cheese, cover, and let it melt.
- Garnish with parsley and serve hot.
