Ingredients

  • 1 lb ground beef (or turkey)
  • 4 medium russet or Yukon Gold potatoes, diced
  • 1 small onion, chopped
  • 1 green bell pepper, chopped (optional)
  • 2 cloves garlic, minced
  • 1 cup sloppy joe sauce (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced potatoes, season with salt and pepper, and cook until golden and tender (12–15 minutes). Remove and set aside.
  3. Cook the ground beef until browned, then drain the excess fat.
  4. Add onion, bell pepper, and garlic. Cook until softened.
  5. Stir in sloppy joe sauce and simmer for 3–4 minutes.
  6. Return potatoes to skillet and mix well.
  7. Top with cheese, cover, and let it melt.
  8. Garnish with parsley and serve hot.
