Description

Ingredients

  • 1 medium purple sweet potato (cooked & mashed)
  • 1 cup milk (dairy or plant-based)
  • 1 cup brewed black or green tea (cooled)
  • 23 tbsp sugar, honey, or condensed milk (to taste)
  • ½ cup tapioca pearls (cooked)
  • ½ cup ice cubes
  • Optional: brown sugar syrup, vanilla extract, or coconut milk

Instructions

  1. Peel and cube the purple sweet potato. Boil until tender (15–20 minutes). Mash or blend until smooth.
  2. Brew 1 cup of strong tea and allow it to cool.
  3. Cook tapioca pearls according to package instructions. Rinse and soak in syrup if desired.
  4. In a blender, combine mashed sweet potato, milk, and sweetener. Blend until creamy.
  5. Assemble: Add tapioca pearls to a tall glass, followed by ice. Pour in the sweet potato mixture and top with cooled tea.
  6. Stir gently, insert a bubble tea straw, and enjoy fresh!
