A creamy, colorful, and antioxidant-rich bubble tea made with purple sweet potatoes, chewy tapioca pearls, and refreshing brewed tea. Perfect for a café-style treat at home.

- 1 medium purple sweet potato (cooked & mashed)
- 1 cup milk (dairy or plant-based)
- 1 cup brewed black or green tea (cooled)
- 2–3 tbsp sugar, honey, or condensed milk (to taste)
- ½ cup tapioca pearls (cooked)
- ½ cup ice cubes
- Optional: brown sugar syrup, vanilla extract, or coconut milk
Instructions
- Peel and cube the purple sweet potato. Boil until tender (15–20 minutes). Mash or blend until smooth.
- Brew 1 cup of strong tea and allow it to cool.
- Cook tapioca pearls according to package instructions. Rinse and soak in syrup if desired.
- In a blender, combine mashed sweet potato, milk, and sweetener. Blend until creamy.
- Assemble: Add tapioca pearls to a tall glass, followed by ice. Pour in the sweet potato mixture and top with cooled tea.
- Stir gently, insert a bubble tea straw, and enjoy fresh!
Notes
- Use Okinawan or ube sweet potatoes for the best color and flavor.
- Adjust sweetness based on preference and the syrup used for pearls.
- For a vegan version, use almond, oat, or coconut milk.
- Best enjoyed immediately—pearls lose their chewiness if left too long.
