For the Cake:

- 2 cups sugar
- 2 eggs, room temperature
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
- 1 can (20 oz) crushed pineapple in juice, lightly drained
- ½ cup butter (or oil for extra moistness)
- ½ cup buttermilk or sour cream
For the Frosting (Cream Cheese):
- 8 oz cream cheese, softened
- ½ cup butter, softened
- 2–3 cups powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp pineapple juice (optional, for extra flavor)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a bowl, whisk flour, baking soda, and salt together.
- In another large bowl, cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.
- Alternate adding dry ingredients with buttermilk (or sour cream). Gently fold in crushed pineapple with some juice.
- Pour batter into prepared pan. Bake for 35–40 minutes or until a toothpick comes out clean.
- Cool the cake completely before frosting.
- To make frosting: Beat cream cheese and butter until smooth. Add powdered sugar gradually, then mix in vanilla (and pineapple juice if using).
- Frost the cooled cake and garnish with pineapple chunks, coconut, or nuts if desired.
Notes
- Cake stays fresh for 2 days at room temperature or 5–6 days in the fridge.
- For extra flavor, add ½ cup shredded coconut or toasted pecans to the batter.
- This cake tastes even better the next day as the pineapple flavors deepen.
