Description

A healthier twist on the classic Marry Me Chicken, using creamy cottage cheese instead of heavy cream. Tender chicken breasts in a rich, savory sauce with sun-dried tomatoes, garlic, and Parmesan. Perfect for a romantic dinner or a comforting weeknight meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cottage cheese, blended until smooth
  • ½ cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ½ cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet over medium heat and sear chicken until golden and cooked through. Remove from skillet.
  3. Sauté garlic in the same skillet until fragrant, then add sun-dried tomatoes for 1 minute.
  4. Add chicken broth and bring to a gentle simmer.
  5. Stir in blended cottage cheese and Parmesan, cooking until the sauce thickens.
  6. Return chicken to the skillet, coat with sauce, and simmer for 2–3 minutes.
  7. Garnish with fresh basil or parsley and serve hot.

Notes

  • For a thicker sauce, simmer uncovered or add extra Parmesan.
  • To thin, add a splash of chicken broth or milk.
  • Can be made ahead: prepare the sauce and sear chicken separately, then combine when ready.
  • Freezes well for up to 2 months; thaw overnight in the fridge.
