- 4 boneless, skinless chicken breasts
- 1 cup cottage cheese, blended until smooth
- ½ cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- ½ cup low-sodium chicken broth
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh basil or parsley for garnish
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat and sear chicken until golden and cooked through. Remove from skillet.
- Sauté garlic in the same skillet until fragrant, then add sun-dried tomatoes for 1 minute.
- Add chicken broth and bring to a gentle simmer.
- Stir in blended cottage cheese and Parmesan, cooking until the sauce thickens.
- Return chicken to the skillet, coat with sauce, and simmer for 2–3 minutes.
- Garnish with fresh basil or parsley and serve hot.
Notes
- For a thicker sauce, simmer uncovered or add extra Parmesan.
- To thin, add a splash of chicken broth or milk.
- Can be made ahead: prepare the sauce and sear chicken separately, then combine when ready.
- Freezes well for up to 2 months; thaw overnight in the fridge.
