- 4 large eggs, beaten
- 1/2 cup chopped green onions or chives
- Salt and pepper, to taste
- Optional: crushed cornflakes or bacon bits for topping
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, mix hash browns, ham, 1 1/2 cups cheese, and green onions.
- In a separate bowl, whisk eggs and sour cream; season with salt and pepper.
- Combine egg mixture with hash brown mixture; pour into baking dish.
- Top with remaining cheese and optional topping.
- Bake uncovered for 45–55 minutes until bubbly and golden.
- Let rest 10 minutes before serving.
