Description

Ingredients

  • 4 cups frozen hash browns, thawed
  • 2 cups diced ham (leftover or cooked)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream (or cream of chicken soup)
  • 4 large eggs, beaten
  • 1/2 cup chopped green onions or chives
  • Salt and pepper, to taste
  • Optional: crushed cornflakes or bacon bits for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix hash browns, ham, 1 1/2 cups cheese, and green onions.
  3. In a separate bowl, whisk eggs and sour cream; season with salt and pepper.
  4. Combine egg mixture with hash brown mixture; pour into baking dish.
  5. Top with remaining cheese and optional topping.
  6. Bake uncovered for 45–55 minutes until bubbly and golden.
