Description

This Instant Pot Mexican Rice Rotel is a quick, flavorful side dish made with fluffy rice, Rotel tomatoes, green chilies, and spices. Perfect for tacos, burritos, or as a stand-alone comfort meal. Ready in just 20 minutes with minimal effort!


Ingredients

  • 2 cups long-grain white rice (rinsed)
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 3 cups chicken broth (or vegetable broth)
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • Fresh cilantro & lime wedges (optional, for garnish)

Instructions

  1. Rinse rice until the water runs clear.
  2. Set Instant Pot to Sauté mode, add oil, onions, and garlic; cook until golden.
  3. Stir in cumin, chili powder, paprika, and Rotel tomatoes.
  4. Add rice and broth; mix gently to combine.
  5. Seal lid, cook on High Pressure for 4 minutes.
  6. Let it naturally release for 10 minutes, then vent.
  7. Fluff rice with a fork and garnish with cilantro and lime.

Notes

  • Use mild Rotel for less spice, hot Rotel for extra heat.
  • Double the recipe in a larger Instant Pot; cooking time remains the same.
  • To make vegetarian, swap chicken broth with vegetable broth.
