This Instant Pot Mexican Rice Rotel is a quick, flavorful side dish made with fluffy rice, Rotel tomatoes, green chilies, and spices. Perfect for tacos, burritos, or as a stand-alone comfort meal. Ready in just 20 minutes with minimal effort!

- 2 cups long-grain white rice (rinsed)
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 3 cups chicken broth (or vegetable broth)
- 1 tsp cumin powder
- 1 tsp chili powder
- 1 tsp smoked paprika
- Salt & pepper to taste
- Fresh cilantro & lime wedges (optional, for garnish)
Instructions
- Rinse rice until the water runs clear.
- Set Instant Pot to Sauté mode, add oil, onions, and garlic; cook until golden.
- Stir in cumin, chili powder, paprika, and Rotel tomatoes.
- Add rice and broth; mix gently to combine.
- Seal lid, cook on High Pressure for 4 minutes.
- Let it naturally release for 10 minutes, then vent.
- Fluff rice with a fork and garnish with cilantro and lime.
Notes
- Use mild Rotel for less spice, hot Rotel for extra heat.
- Double the recipe in a larger Instant Pot; cooking time remains the same.
- To make vegetarian, swap chicken broth with vegetable broth.
