Ingredients
Scale
- 1 cup granulated sugar
- 1 cup water
- ½ cup chopped almonds or hazelnuts
- 1 teaspoon vanilla extract
- 1 tablespoon brown sugar (optional, for deeper flavor)
- Pinch of salt
Instructions
- Toast the chopped nuts in a dry pan over medium heat for 3–4 minutes until fragrant. Do not burn.
- In a saucepan, combine water and toasted nuts. Bring to a gentle simmer for 5 minutes.
- Strain the mixture to remove nuts and return the infused liquid to the pan.
- Add sugar (and brown sugar if using). Stir until dissolved.
- Simmer on low heat for 8–10 minutes until slightly thickened.
- Remove from heat and stir in vanilla extract and salt.
- Cool completely before transferring to a sterilized glass bottle.
Notes
- Toasting the nuts enhances flavor significantly.
- For stronger flavor, simmer nuts a few extra minutes.
- Store in a clean, airtight bottle in the refrigerator.
- Use within 2–3 weeks for best freshness.
- Do not overboil, as syrup may become too thick.
