Description

This homemade toffee nut syrup is rich, buttery, and perfectly sweet with warm toasted nut flavor. It’s easy to make using simple pantry ingredients and tastes just like a café-style syrup. Perfect for coffee, lattes, desserts, and holiday drinks, this syrup adds a smooth caramel-nut depth to any recipe.


Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • ½ cup chopped almonds or hazelnuts
  • 1 teaspoon vanilla extract
  • 1 tablespoon brown sugar (optional, for deeper flavor)
  • Pinch of salt

Instructions

  1. Toast the chopped nuts in a dry pan over medium heat for 3–4 minutes until fragrant. Do not burn.
  2. In a saucepan, combine water and toasted nuts. Bring to a gentle simmer for 5 minutes.
  3. Strain the mixture to remove nuts and return the infused liquid to the pan.
  4. Add sugar (and brown sugar if using). Stir until dissolved.
  5. Simmer on low heat for 8–10 minutes until slightly thickened.
  6. Remove from heat and stir in vanilla extract and salt.
  7. Cool completely before transferring to a sterilized glass bottle.

Notes

  • Toasting the nuts enhances flavor significantly.
  • For stronger flavor, simmer nuts a few extra minutes.
  • Store in a clean, airtight bottle in the refrigerator.
  • Use within 2–3 weeks for best freshness.
  • Do not overboil, as syrup may become too thick.
