- Preheat oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking dish with parchment paper or lightly grease it.
- In a large mixing bowl, whisk together the coconut oil, honey (or maple syrup), egg, vanilla extract, and applesauce until smooth and combined.
- In another bowl, mix the dry ingredients: oats, flour, baking soda, salt, and cinnamon.
- Combine the wet and dry ingredients. Stir until everything is evenly mixed.
- Fold in the chocolate chips and any optional add-ins (nuts, chia seeds, etc.).
- Spread the batter evenly into the prepared baking dish. Smooth the top with a spatula.
- Bake for 20–25 minutes, or until the edges are golden and a toothpick inserted in the center comes out mostly clean.
- Let the bars cool completely in the pan before slicing into squares or rectangles.

- Store in an airtight container at room temperature for 2–3 days.
