Ingredients

  • 2/3 cup (130 g) granulated sugar
  • 2 large egg yolks
  • 2 cups (250 g) all-purpose flour, sifted

  • 1 teaspoon lemon zest (optional)

Instructions

  1. In a large bowl, cream together softened butter and sugar until light and fluffy.
  2. Add egg yolks one at a time, mixing well after each addition. Stir in vanilla extract or lemon zest if using.
  3. Gradually add sifted flour and salt, folding gently until a soft dough forms. Do not overmix.
  4. Wrap the dough in plastic wrap and chill for at least 30 minutes.
  5. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Roll out the chilled dough to 1/4-inch thickness on a lightly floured surface.
  7. Cut into desired shapes using a cookie cutter or knife. Arrange on baking sheet.
  8. Bake for 10–12 minutes, until edges are lightly golden but centers remain pale.
  9. Cool on a wire rack before serving or storing.

Notes

  • Chilling the dough prevents cookies from spreading too much during baking.
  • For added flavor, dip cooled cookies in melted dark chocolate or sprinkle with coarse sugar before baking.
