- 2 large egg yolks

- 1 teaspoon lemon zest (optional)
Instructions
- In a large bowl, cream together softened butter and sugar until light and fluffy.
- Add egg yolks one at a time, mixing well after each addition. Stir in vanilla extract or lemon zest if using.
- Gradually add sifted flour and salt, folding gently until a soft dough forms. Do not overmix.
- Wrap the dough in plastic wrap and chill for at least 30 minutes.
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Roll out the chilled dough to 1/4-inch thickness on a lightly floured surface.
- Cut into desired shapes using a cookie cutter or knife. Arrange on baking sheet.
- Bake for 10–12 minutes, until edges are lightly golden but centers remain pale.
- Cool on a wire rack before serving or storing.
Notes
- Chilling the dough prevents cookies from spreading too much during baking.
- For added flavor, dip cooled cookies in melted dark chocolate or sprinkle with coarse sugar before baking.
- Store cookies in an airtight container for up to 7 days, or freeze baked cookies for 2 months.
