Description

A soft, moist, and zesty eggless cranberry orange bread perfect for holidays, brunch, or gifting. Bursting with tart cranberries and fragrant orange zest, this loaf is easy to make and delightfully festive.


Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tbsp orange zest

Wet Ingredients:

  • 1 cup yogurt/curd
  • ½ cup oil or melted butter
  • ½ cup orange juice
  • ¼ cup milk
  • 1 tsp vanilla extract

Add-Ins:

  • 1 cup fresh or dried cranberries (floured)
  • Optional: ½ cup chopped walnuts/pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
  2. Mix dry ingredients in a bowl.
  3. In another bowl, whisk wet ingredients until smooth.
  4. Fold wet and dry ingredients gently. Add cranberries.
  5. Pour into pan, bake 40–45 mins. Check with a toothpick.
  6. Cool, then optionally drizzle orange glaze.

Notes

  • Do not overmix to prevent a dense texture.
  • Coat cranberries in flour to prevent sinking.
  • Can be made vegan or gluten-free with substitutions.
