Dry Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tbsp orange zest
Wet Ingredients:
- 1 cup yogurt/curd
- ½ cup oil or melted butter
- ½ cup orange juice
- ¼ cup milk
- 1 tsp vanilla extract
Add-Ins:
- 1 cup fresh or dried cranberries (floured)
- Optional: ½ cup chopped walnuts/pecans
Instructions
- Preheat oven to 350°F (175°C). Grease and line a loaf pan.
- Mix dry ingredients in a bowl.
- In another bowl, whisk wet ingredients until smooth.
- Fold wet and dry ingredients gently. Add cranberries.
- Pour into pan, bake 40–45 mins. Check with a toothpick.
- Cool, then optionally drizzle orange glaze.
Notes
- Do not overmix to prevent a dense texture.
- Coat cranberries in flour to prevent sinking.
- Can be made vegan or gluten-free with substitutions.
