For the Crust
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tbsp sugar
For the Cheesecake Filling
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream
For the Topping
- 1 cup caramel sauce (store-bought or homemade)
- 1 cup pecan halves, toasted
- ½ cup chocolate sauce
Instructions
Prepare the Crust
- Mix graham cracker crumbs, sugar, and melted butter in a bowl.
- Press mixture into the bottom of a 9-inch springform pan.
- Bake at 325°F (160°C) for 10 minutes. Let cool.
Make the Cheesecake Filling
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well.
- Stir in vanilla and sour cream.
- Pour filling over cooled crust.
Bake the Cheesecake
- Bake at 325°F (160°C) for 50–60 minutes, until center is almost set.
- Turn off oven, crack door, and let cool for 1 hour.
- Refrigerate for at least 4 hours or overnight.
Add the Topping
- Spread caramel sauce over cooled cheesecake.
- Arrange toasted pecans evenly on top.
- Drizzle generously with chocolate sauce.
