For the Crust

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tbsp sugar

For the Cheesecake Filling

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream

For the Topping

  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup pecan halves, toasted
  • ½ cup chocolate sauce

Instructions

Prepare the Crust

  • Mix graham cracker crumbs, sugar, and melted butter in a bowl.
  • Press mixture into the bottom of a 9-inch springform pan.
  • Bake at 325°F (160°C) for 10 minutes. Let cool.

Make the Cheesecake Filling

  • Beat cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing well.
  • Stir in vanilla and sour cream.
  • Pour filling over cooled crust.

Bake the Cheesecake

  • Bake at 325°F (160°C) for 50–60 minutes, until center is almost set.
  • Turn off oven, crack door, and let cool for 1 hour.
  • Refrigerate for at least 4 hours or overnight.

Add the Topping

  • Spread caramel sauce over cooled cheesecake.
  • Arrange toasted pecans evenly on top.
  • Drizzle generously with chocolate sauce.
