  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 23 tbsp Cajun seasoning (adjust to taste)
  • 1 tsp smoked paprika
  • 1 tbsp tomato paste
  • 1 can (15 oz) tomato sauce
  • ½ cup chicken broth
  • 1 tsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 46 brioche or sandwich buns, toasted
  • Optional toppings: pickles, jalapeños, shredded cheese, parsley

Instructions

  1. Cook Chicken – Heat olive oil in a skillet over medium heat. Add ground chicken and cook until no longer pink, breaking it up with a spoon (5–6 minutes).
  2. Add Vegetables – Stir in onion, green bell pepper, red bell pepper, and garlic. Cook 3–4 minutes until softened.
  3. Season – Mix in Cajun seasoning, smoked paprika, and tomato paste. Stir well to coat the chicken and vegetables.
  4. Simmer – Add tomato sauce, chicken broth, Worcestershire sauce, and brown sugar. Stir and simmer uncovered 12–15 minutes until thickened.
  5. Assemble – Spoon the mixture onto toasted buns. Add optional toppings and serve hot.
