- 1 tbsp olive oil
- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 2–3 tbsp Cajun seasoning (adjust to taste)
- 1 tsp smoked paprika
- 1 tbsp tomato paste
- 1 can (15 oz) tomato sauce
- ½ cup chicken broth
- 1 tsp Worcestershire sauce
- 1 tbsp brown sugar
- 4–6 brioche or sandwich buns, toasted
- Optional toppings: pickles, jalapeños, shredded cheese, parsley
Instructions
- Cook Chicken – Heat olive oil in a skillet over medium heat. Add ground chicken and cook until no longer pink, breaking it up with a spoon (5–6 minutes).
- Add Vegetables – Stir in onion, green bell pepper, red bell pepper, and garlic. Cook 3–4 minutes until softened.
- Season – Mix in Cajun seasoning, smoked paprika, and tomato paste. Stir well to coat the chicken and vegetables.
- Simmer – Add tomato sauce, chicken broth, Worcestershire sauce, and brown sugar. Stir and simmer uncovered 12–15 minutes until thickened.
- Assemble – Spoon the mixture onto toasted buns. Add optional toppings and serve hot.
