  • 8 oz cream cheese, softened
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup milk
  • ½ cup melted butter
  • 1 tsp vanilla extract
  • 1½ tsp baking powder
  • Pinch of salt
  • Optional: shredded coconut, cinnamon, or toasted nuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Pour melted butter into a 9×13-inch baking dish.
  3. In a bowl, mix flour, sugar, baking powder, and salt.
  4. Add milk and vanilla; whisk until smooth.
  5. Pour batter over the melted butter (don’t stir).
  6. Spoon pineapple evenly over the batter.
  7. Add dollops of softened cream cheese across the top.
  8. Bake 35–45 minutes until golden, bubbly, and set in the center.
  9. Cool 10 minutes before serving.
