Description
A flavorful hibachi-style fried rice inspired by the famous Benihana recipe. Made with chicken, garlic butter, vegetables, soy sauce, and day-old rice, this dish brings restaurant-quality flavor to your home kitchen.

- 3 cups cooked day-old rice (preferably short-grain)
- 1 lb boneless, skinless chicken breast (cut into small cubes)
- 2 tbsp garlic butter (or regular butter with minced garlic)
- 1 small onion, finely diced
- 1 medium carrot, finely diced
- 2 green onions, chopped
- 2 eggs, lightly beaten
- 3 tbsp soy sauce (adjust to taste)
- 2 tbsp vegetable oil (or sesame oil)
- Salt and pepper, to taste
Instructions
- Heat 1 tbsp oil in a large wok or skillet over medium-high heat.
- Add chicken cubes, season with salt and pepper, and cook until golden brown. Remove and set aside.
- In the same pan, add garlic butter. Sauté onion and carrot until softened.
- Push veggies to the side, pour in beaten eggs, and scramble until cooked.
- Add day-old rice, breaking up clumps with a spatula. Stir everything together.
- Return chicken to the pan, add soy sauce, and toss until rice is evenly coated.
- Garnish with green onions and serve hot.
Notes
- Day-old rice works best as it prevents clumping.
- You can substitute chicken with shrimp, beef, or tofu.
- For extra flavor, drizzle a little sesame oil before serving.
