Description

This baked cheesy tomatoes recipe combines juicy, ripe tomatoes with perfectly melted cheese and aromatic herbs for a dish that’s both healthy and comforting. Ideal as a side, snack, or light main, it’s quick to make and full of rich, Mediterranean-inspired flavor.


Ingredients

  • 6 medium Roma tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh basil, chopped (for garnish)
  • Optional: ¼ cup breadcrumbs for extra crunch

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice tomatoes in half lengthwise and remove seeds or excess pulp.
  3. Place tomato halves cut side up on the baking sheet.
  4. Drizzle with olive oil and sprinkle with salt, pepper, garlic, and oregano.
  5. Top each tomato with mozzarella and Parmesan cheese. Add breadcrumbs if desired.
  6. Bake for 15–20 minutes, or until cheese is golden and bubbling.
  7. Remove from oven, garnish with fresh basil, and serve warm.
