Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk (or milk)
  • 2 medium apples, peeled and diced
  • 2 tbsp brown sugar (for apples)
  • 1 tsp ground cinnamon
  • Optional glaze: 1/2 cup powdered sugar, 1 tbsp milk, 1/4 tsp vanilla

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5 loaf pan.
  2. Toss the apples with cinnamon and 2 tablespoons of brown sugar; set aside.
  3. In a bowl, whisk flour, baking powder, baking soda, and salt.
  4. Cream butter with sugars until fluffy. Add eggs and vanilla.
  5. Mix in dry ingredients alternately with buttermilk until just combined.
  6. Layer half the batter, half the apples, then repeat. Swirl gently with a knife.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool 10 minutes in the pan, then transfer to a rack. Drizzle with glaze if desired.

Notes

  • Use a mix of tart (Granny Smith) and sweet (Honeycrisp/Fuji) apples for the best flavor.
  • Don’t overmix batter; it should be slightly lumpy.
  • For crunch, add 1/2 cup chopped walnuts or pecans.
