- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk (or milk)
- 2 medium apples, peeled and diced
- 2 tbsp brown sugar (for apples)
- 1 tsp ground cinnamon
- Optional glaze: 1/2 cup powdered sugar, 1 tbsp milk, 1/4 tsp vanilla
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5 loaf pan.
- Toss the apples with cinnamon and 2 tablespoons of brown sugar; set aside.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- Cream butter with sugars until fluffy. Add eggs and vanilla.
- Mix in dry ingredients alternately with buttermilk until just combined.
- Layer half the batter, half the apples, then repeat. Swirl gently with a knife.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool 10 minutes in the pan, then transfer to a rack. Drizzle with glaze if desired.
Notes
- Use a mix of tart (Granny Smith) and sweet (Honeycrisp/Fuji) apples for the best flavor.
- Don’t overmix batter; it should be slightly lumpy.
- For crunch, add 1/2 cup chopped walnuts or pecans.
